Frosting is the icing on the cake
(pardon the pun).
It is a sweet glaze made from
sugar and can include such ingredients as butter, water, egg whites,
milk, flavoring and colorants.
Typically frosting is used to decorate cakes and cookies, however
glazes are sometimes used on desserts as well.
The simplest frosting is glacé which is powdered sugar and water but
with adding other ingredients frosting variants have been developed.
Butter Frosting: includes beaten butter in the recipe.
Cream Cheese Frosting: the
addition of cream cheese gives it a sharp tang to complement the
sweetness of the sugar.
Royal Icing: uses egg
whites to make a hard icing when set and is used for intricate
piping.
Fondant: uses glycerin
(sugar alcohol) to make a softer royal icing that can be formed into
shapes.
Marzipan/Almond icing: uses
ground almonds to give it it's distinctive flavor and is usually
layered under fondant.
Glaze: is a thin almost
clear frosting made by heating the sugar and water. Fruit can also
be used.
Though not made from sugar and water Ganache is used as a
frosting or filling and is made from heavy cream and dark chocolate.
