Dessert is commonly known as the
final sweet course of a meal and is also known as pudding, afters
and sweet in some countries.
Originally dessert consisted of
fruit and nuts, whether fresh or dried, but come to be generalized
to include sweet puddings.
There are still some that insist
on the distinction between dessert and pudding. Dessert being any
course that contains fruit and pudding being anything other sweet
dish served in this course.
For much of history desserts and
puddings were a privilege of aristocracy, or a rare holiday treat.
as the upper class were the only ones that could afford sugar or
more than one course in a meal.
However as sugar become cheaper
and more readily available by the mechanization of sugar production,
the development and popularity of desserts and puddings spread.
With the European penchant for
adding sugar to chocolate made from cocoa, it became a natural
progression to add chocolate to the dessert repertoire.
Chocolate dessert recipes are many
and varied, from the light melt-in-your-mouth mousses and ice creams
to the heavy baked puddings and cheesecakes.
