The humble cookie is a small,
flat, crisp, baked dessert. Cookies are relatively quick and easy to
bake.
Cookies can be plain or decorated
in a variety of ways including frosting, glazes, chocolate with
confectionery, dried fruits, and nuts.
In many English speaking countries
the cookie is called a biscuit however in North America the term
cookie is used to distinguish it from the quick bread (similar to
the scone) known there as a biscuit and in Scotland a cookie denotes
a plain bun.
For the purpose of this website
and accompanying blog the term cookie refers to the English biscuit.
Cookies have a number of
classification depending on their structure and methodology used to
form them:
Drop cookies: made from a relatively soft dough are dropped
by spoonfuls onto the baking sheet and during baking spread
and flatten.
Refrigerator cookies: made from a stiff dough shaped into a
cyclinder that is refrigerated and sliced into round cookies before
baking.
Moulded cookies: made from a stiffer dough that is moulded
into balls or cookie shapes by hand before baking.
Rolled cookies: made from a stiffer dough that is rolled out
like pastry and cut into shapes with a cookie cutter.
Pressed cookies: made from a soft dough that is
extruded from a cookie press into various decorative shapes before
baking.
Bar cookies: made from a batter or dough that is poured
or pressed into a pan and cut into cookie-sized pieces after baking.
Brownies are an example of this type of cookie.
Sandwich cookies: are cookies that are assembled as a
sandwich with a sweet filling. Fillings may be marshmallow, jam, or
frosting.
